Pork Chop and Smashed Potatoes

Prepare the Potatoes

Wash and boil the red potatoes in salted water until fork-tender, about 15-20 minutes. Drain and set aside.

Smashed Potatoes

In a large bowl, add the boiled potatoes and smash them with a fork or potato masher. Stir in butter, minced garlic, and milk. Season with salt and adjust to taste. Optionally, fold in chopped chives.

Prepare the Pork Chops

Preheat a grill or skillet over medium-high heat. Pat the pork chops dry with paper towels, then season both sides with salt and freshly cracked black pepper.

Cook the Pork Chops

Add olive oil to the hot skillet or grill. Cook the pork chops for 6-7 minutes on each side until they reach an internal temperature of 145°F (63°C). Let them rest for 5 minutes before serving.

Serve

Plate the smashed potatoes alongside the pepper-crusted pork chops. Garnish with additional chives if desired.
