Prepare the glass

Run a lime wedge around the rim of a highball or Collins glass, then dip the rim into the salt to create a light salted rim. Fill the glass with ice.

Mix the base

In a cocktail shaker, combine the mezcal, grapefruit juice, lime juice, and agave nectar. Add ice until the shaker is about two-thirds full.

Chill and combine

Shake vigorously for 12–15 seconds until well-chilled. Strain the mixture into the salted glass over the ice.

Top and finish

Top with sparkling water (club soda). Give a gentle stir to integrate. Garnish with a grapefruit wheel on the rim.
