Method
Prepare Cocktail Base
Combine ingredients
Add 2 oz woody creek pea flower gin, 0.75 oz Lillet Blanc, 0.5 oz fresh lemon juice, and 0.5 oz honey simple syrup to a mixing glass.
Strain
Double-strain the chilled mixture into a chilled coupe or martini glass using a Hawthorne and fine mesh strainer to remove small ice shards and any particulate.
Top & Finish
Garnish with a dehydrated lemon wheel placed on the surface of the cocktail or floated on the rim.
Serving
Serve the cocktail 'up' (no ice) immediately while cold. Recommend presenting on a small napkin or saucer. Sip and enjoy the floral pea-flower gin notes balanced with the citrus, honey, and the crisp acidity of the Sauvignon Blanc.
