In a skillet over medium heat, add the chorizo. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

In a small bowl, mix the sour cream, chopped cilantro, lime juice, salt, and pepper. Adjust seasoning to taste.

Prepare the Avocado

Cut the avocados in half and remove the pit. Scoop out a little bit of the flesh to create more room for the filling.

Assemble the Dish

Stuff each avocado half with the cooked chorizo. Top with shredded Oaxaca cheese.

Place the stuffed avocados under the broiler for about 2-3 minutes, or until the cheese is melted and bubbly.

Remove from the oven, top with arugula, and drizzle with cilantro crema. Serve immediately.
