Cook the Octopus

In a large pot, bring salted water to a boil. Add the whole octopus and cook for about 40-50 minutes or until tender. Once cooked, drain and let it cool.

Prepare the Marinade

In a large bowl, combine olive oil, lemon juice, chopped red onion, white onion, parsley, salt, and black pepper. Mix well.

Slice the Octopus

Once the octopus has cooled, slice it into bite-sized pieces and add it to the marinade.

Marinate

Cover the bowl and refrigerate for at least 2 hours, preferably overnight to allow the flavors to meld.

Serve

Toss the salad lightly before serving. Adjust seasoning with additional salt and pepper if needed.
