Burrito Filling Preparation

Cook the Shrimps

In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the shrimps and cook for about 3-4 minutes until they turn pink and opaque. Season with salt and pepper to taste. Remove from heat.

Sauté the Vegetables

In the same skillet, add a little more oil if needed. Sauté the diced onions and peppers (red and green) until they are soft and translucent, about 5-7 minutes.

Combine Filling Ingredients

In a large bowl, combine the cooked shrimps, sautéed vegetables, and cooked rice. Mix well and adjust seasoning if necessary.

Prepare Guacamole

If not using store-bought guacamole, mash ripe avocados in a bowl and mix with lime juice, salt, and diced tomatoes (optional) until smooth.

Burrito Assembly and Baking

Assemble the Burritos

Lay a large flour tortilla flat on a clean surface. Spoon about 1/4 of the shrimp and vegetable mixture onto the center of the tortilla. Top with guacamole.

Wrap the Burrito

Fold the sides of the tortilla over the filling, then roll the bottom up to create a burrito shape. Repeat for all tortillas.

Prepare for Baking

Preheat your oven to 180°C (350°F). Place the assembled burritos in a baking dish, seam side down.

Top with Salsa and Cheese

Spread salsa Ahora over the top of the burritos, then sprinkle shredded cheese evenly over the salsa.

Bake the Burritos

Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.

Serve with Sour Cream

Remove from oven, let cool for a few minutes, then serve with a dollop of sour cream on top.
