Make toasted achari spice mix

Place a small dry skillet over medium heat. Add mustard seeds, fennel seeds, cumin seeds, coriander seeds, fenugreek seeds and nigella. Toast, stirring constantly, until aromatic and seeds darken slightly, about 2–3 minutes. Immediately transfer to a plate to stop cooking and let cool 2–3 minutes. Grind coarsely in a spice grinder or mortar & pestle with the dried red chili flakes and turmeric—leave it slightly coarse, not powdery (this is the achari masala).

Prepare achari pickling oil

Heat mustard oil in a small saucepan until it just begins to smoke (about 180–200°C). Remove from heat and let it cool for 1 minute. In a heatproof bowl combine the cooled oil with 3 tbsp white vinegar, 1 tbsp sugar, 1 tsp salt and 1 tbsp lemon juice. Stir in 2 heaped tablespoons of the ground achari spice mix to make a chunky achari paste. Taste and adjust salt/sugar/vinegar balance — the final mix should be tangy, slightly spicy and punchy.

Cook the duck

Score the duck breast skin in a crosshatch pattern without cutting the meat. Pat dry, then season both sides with 1.5 tsp salt and 1 tsp freshly ground black pepper. Place a cold skillet over medium-high heat, add duck breasts skin-side down (no extra oil necessary; duck will render fat). Cook skin-side down 6–8 minutes until much of the fat has rendered and skin is crisp and golden; spoon off excess fat if it accumulates. Flip and sear the meat side 2 minutes. Transfer the pan to a preheated oven at 180°C (350°F) and roast for 8–10 minutes for medium (internal ~58–60°C). Remove and rest 8–10 minutes, then shred or thinly slice the duck using two forks. Reserve 2–3 tbsp of the achari paste and fold into the shredded duck while still warm so the duck picks up the pickled-mustardy flavors. Keep warm.

Quick pickled red onions

Thinly slice the red onion and place in a bowl. Heat 3 tbsp white vinegar with 0.5 tsp sugar and a pinch of salt (about 30 ml water optional) just until warm, then pour over the onions. Toss, let cool to room temperature and refrigerate for 15–20 minutes while other components are prepared. These will turn lightly pink and mellow in acidity—drain before using if very vinegary.

Green chutney

In a blender combine 1 cup packed cilantro, 0.5 cup packed mint, 1 green chili, 30 ml water, 0.5 tsp salt and 1–2 tsp lemon juice (or to taste). Blitz to a smooth bright green chutney, adding water in small amounts to loosen. Taste and adjust salt/heat. Transfer to a bowl and refrigerate until assembly.

Tamarind-date (sweet) chutney

In a small saucepan combine 2 tbsp tamarind paste, 120 ml water and 2 tbsp jaggery. Bring to a gentle simmer, stirring to dissolve the jaggery. Add 0.5 tsp ground roasted cumin and a pinch of salt. Simmer 6–8 minutes until slightly thickened (it will thicken more as it cools). Strain if you prefer very smooth texture and cool to room temperature.

Whisk the yogurt

Whisk 0.5 cup plain yogurt with a pinch of salt and a very small pinch of sugar to taste until smooth and slightly loose so it can be drizzled. If too thick, thin with 1–2 tsp water.

Make mathri dough

In a mixing bowl combine 1.5 cups all-purpose flour, 2 tbsp fine semolina, 1 tsp ajwain, 1 tsp crushed fennel, 0.5 tsp red chili powder and 1 tsp salt. Rub in 4 tbsp cold ghee (or cold butter) with your fingertips until mixture resembles coarse breadcrumbs. Add about 45 ml cold water gradually and bring together into a stiff, non-sticky dough. Cover and rest 15–20 minutes.

Shape and fry mathris

Divide dough into golf-ball sized portions. Roll each ball between your palms and flatten slightly, then roll out gently into 2–3 mm thick discs (keep dusting with a little flour). Heat oil in a deep pan to 160–170°C (320–340°F) — test with a small piece of dough: it should sizzle and slowly rise. Fry mathris in batches on medium-low heat, turning, until puffed and deep golden and crisp, about 4–6 minutes per batch (lower heat ensures they cook through). Drain on paper towels and let cool; they will crisp further. If desired, while warm toss lightly with 0.5 tsp chaat masala or a pinch of extra chili powder.

Assembly — Achari Duck Chaat, Masala Mathri

Prepare base salad: combine the diced cucumber and tomato in a bowl and season very lightly with a pinch of salt and 0.25 tsp chaat masala. Drain the quick-pickled onions.

Warm the shredded achari duck briefly in a skillet on low (1–2 minutes) if it has cooled; taste and add additional achari paste 1 tsp at a time if you want more tang/spice. Keep warm.

To plate (per 4 servings): Arrange 4 mathris (or broken pieces) on each plate or serve mathri on a separate board. Spoon a generous portion of the cucumber–tomato salad on the plate, top with 100–125 g (portion) of shredded achari duck. Scatter a tablespoon each of green chutney and tamarind chutney over the duck (or present as zigzags), add a few spoonfuls of whisked yogurt in ribbons, and top with pickled red onions.

Finish with garnishes: sprinkle chopped cilantro, a generous pinch of sev for crunch, a light dusting of chaat masala, and a squeeze of lemon wedge. Serve immediately so mathri stays crisp — guests can scoop duck and chutney onto mathri or eat the chaat with spoon and crunch mathri alongside.
