Make jaggery (gur) syrup

Put the grated gur and 2 tbs water into a small saucepan over medium heat. Stir constantly until the jaggery fully dissolves. Once dissolved, lower heat and simmer gently for 2–3 minutes until the mixture becomes a glossy, slightly thick syrup that coats the back of a spoon (soft-ball consistency). Add 1 tsp lemon juice to prevent recrystallization, then remove from heat. Strain the syrup through a fine-mesh sieve into a small bowl to remove any impurities. Set aside and keep warm; reserve about 2–3 tbs of syrup per 2 slices for finishing.

Prepare malai spread

In a medium bowl, combine the fresh malai (or chilled heavy cream) with 2 tbs whole milk to loosen to a spreadable consistency. Add 0.5 tsp cardamom powder, 0.5 tsp vanilla extract (if using), a pinch of salt (to taste), and 1–2 tbs of the warm jaggery syrup you made (start with 1 tbs and adjust sweetness). Stir gently until smooth and spreadable but not runny. Taste and adjust cardamom or syrup if needed.

Prepare nuts and raisins

Roughly chop the pistachios and almonds. If you prefer the nuts warm and more aromatic, warm a small dry skillet over low heat and toast the chopped nuts and raisins for 1–2 minutes, shaking frequently, until they release aroma—do not brown. Remove from heat and set aside.

Toast the bread

Heat a large skillet or griddle over medium heat and add 1 tbs ghee or butter. When hot, place bread slices in a single layer and cook until golden brown and crisp on the first side, about 1.5–2 minutes. Flip, add the remaining 1 tbs ghee to the skillet if needed, and toast the second side until golden and crisp, another 1.5–2 minutes. Work in batches if necessary so all slices are evenly toasted.

Assemble the Gur Malai Toast

While the toast is still warm, transfer to a platter. Spread a generous tablespoon (or more, to taste) of the malai mixture evenly over each slice so it adheres to the warmth of the bread. Drizzle 2–3 tbs of the prepared jaggery syrup across every two slices (approximately 1/2 to 1 tbs per slice) so the syrup soaks slightly into the toast without making it soggy. Immediately sprinkle the chopped pistachios, chopped almonds, and raisins evenly over the syruped malai. Finish each toast with a light dusting of the remaining 1/4 tsp ground cinnamon and a tiny pinch more cardamom if desired.

Serve

Serve the Gur Malai Toast warm so the malai is soft and the jaggery syrup is glossy. Offer extra jaggery syrup on the side for people who want it sweeter. Leftovers: store unassembled toasted bread and malai separately in the refrigerator; assemble fresh before serving.
