Build and stir

Chill a rocks glass (or short tumbler) with ice for about 2 minutes, then discard the ice and add fresh ice to fill halfway. In a mixing glass (or shaker without shaking), combine 2 oz bourbon, 0.5 oz fresh lemon juice, 0.5 oz maple syrup, and 2 dashes of Angostura bitters. Add enough ice to the mixing glass to chill the mixture without over-diluting.

Stir and strain

Stir the bourbon mixture with a bar spoon for 15–20 seconds until well chilled and slightly diluted. Strain the mixture into the prepared rocks glass over fresh ice (leave room for the cider).

Top with cider

Carefully top the bourbon base with 4 oz chilled dry cider, pouring slowly over the back of a spoon if desired to preserve some effervescence. Do not stir vigorously; a gentle brief lift of the glass to combine is fine.

Garnish and serve

Add a thin fresh apple slice and a lemon twist as garnish. Optionally, express the lemon twist over the drink to release oils, rim the glass with the twist, then drop it in. Serve immediately.
