Make honey syrup

Combine equal parts honey and hot water, stir until fully combined and cooled. Measure out 0.5 oz for the cocktail. Chill any remaining syrup for later use.

Chill a rocks glass in the freezer for a few minutes or fill with ice water while you prepare the drink.

Build & Shake

Add 1.5 oz soju (or neutral grain spirit), 0.5 oz aged dark rum, 0.25 oz plum brandy, 0.5 oz honey syrup, 0.25 oz dry vermouth, 0.5 oz fresh lemon juice, and 2 dashes orange bitters into a cocktail shaker.

Fill the shaker with ice (about 1 cup). Cap and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the mixture is nicely diluted and slightly frothy from the citrus.

Strain & Finish

Discard ice or water from the chilled rocks glass. Place a single large clear ice cube or sphere into the glass.

Double-strain the cocktail into the prepared glass over the large ice cube using a fine mesh strainer to remove any small ice shards and citrus pulp.

Express a strip of lemon peel over the drink to release the oils, then finely grate about 1/4 teaspoon of lemon zest over the surface for a bright aromatic finish. Optionally drop the expressed peel into the drink as garnish.

Serve immediately.
