Prepare the salmon
Preheat your oven to 375°F (190°C). Pat the B.C. King Salmon fillets dry with paper towels, then season both sides with salt and black pepper.
Prepare the miso glaze
In a small bowl, mix the miso paste with a little water to create a smooth glaze. Adjust the consistency with more water if needed.
Assemble and bake
Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Spread the miso glaze evenly over each fillet. Top with the sautéed shiitake mushrooms. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Prepare the watercress
While the salmon is baking, wash and drain the fresh watercress. Toss it lightly with a drizzle of olive oil and sprinkle with salt.
Serve
Once the salmon is done, remove from the oven. Serve the baked salmon on plates with a side of the dressed watercress and a dollop of yuzu kosho on top.
