Directions for Preparing Fried Lasagna Rotolo

Prepare the Lasagna Noodles

Cook the lasagna noodles according to package instructions until al dente. Drain and set aside to cool.

Make the Filling

In a mixing bowl, combine ricotta cheese, mozzarella cheese, parmesan cheese, egg, chopped basil, salt, and black pepper. Mix well to form the filling.

Assemble the Rotolo

Lay the cooked lasagna noodles flat. Spread an even layer of the cheese filling over each noodle. Roll each noodle tightly into a cylinder.

Chill the Rotolos

Wrap each rolled noodle in plastic wrap and refrigerate for at least 30 minutes to firm up.

Prepare for Frying

Once chilled, remove the rotolos from the fridge and unwrap. Dredge each roll in flour, dip in beaten eggs, and then coat with bread crumbs.

Fry the Rotolos

In a large skillet, heat vegetable oil over medium heat. Fry the breaded rotolos in batches until golden brown on all sides, about 3-4 minutes per side.

Serve

In a serving dish, spread a layer of Rosies sauce, place the fried rotolos on top, and garnish with additional grated parmesan cheese. Serve hot.
