Method
Clarified Mango Milk Wash
Make mango puree
Peel and pit a ripe mango and blend until smooth. Strain through a fine-mesh sieve to yield about 3 oz of silky mango puree. Chill while preparing the rest.
Warm milk and combine
Gently warm 1 cup whole milk to just under simmering (do not boil), about 140–150°F (60–65°C). Remove from heat and stir in the 3 oz strained mango puree and 0.5 oz fresh lime juice until homogenous.
Acid-curdle and clarify
Let the milk/mango mixture sit at room temperature for 10–15 minutes to allow curdling. The curds will form and separate from the whey. Line a fine-mesh strainer with several layers of cheesecloth over a bowl and slowly pour the curdled mixture through. Let drain for 30–45 minutes (do not press) until clear-ish whey has passed through. The liquid collected is the clarified mango milk wash. Reserve ~2–3 oz needed for cocktail and discard solids (or compost). Chill the clarified liquid until ready to use.
Curry Leaf Simple Syrup (can be prepared ahead)
To make the curry leaf syrup, combine 1 cup sugar and 1 cup water in a small saucepan and bring to a simmer until sugar dissolves. Add a small handful (10–12) fresh curry leaves, remove from heat, and steep 20–30 minutes. Strain out leaves and chill. Use 0.5 oz for this cocktail. (If you prefer, use a neutral simple syrup and muddled/fresh curry leaf for garnish instead.)
Cocktail Build
In a mixing tin without ice, combine 1.25 oz Hornitos Reposado, 0.75 oz Solmano con Mango mezcal, 0.5 oz Amaro Montenegro, 0.5 oz curry leaf simple syrup, 0.25 oz fresh lemon juice, and 0.25 oz fresh lime juice.
Add 0.75–1.0 oz of the clarified mango milk wash to the spirit mixture (adjust to desired texture; start with 0.75 oz). Stir gently to integrate for about 10–15 seconds.
If you prefer a clearer final look, let the strained cocktail rest 30–60 seconds and carefully decant to leave any sediment behind.
Garnish & Serve
Serve immediately. Note: the clarified milk adds creaminess and a glossy mouthfeel while keeping the cocktail stable and bright.
