Tamarind-Ginger-Lemongrass Syrup
Make the syrup
Combine 1 cup water and 1 cup granulated sugar in a small saucepan over medium heat.
Add 2 tablespoons tamarind paste, the sliced ginger, bruised lemongrass stalk, and torn lime leaves to the saucepan and stir to combine.
Bring mixture to a gentle simmer, then reduce heat to low. Simmer gently for 8–10 minutes, stirring occasionally, to extract flavors and dissolve sugar.
Remove from heat and let the syrup steep for another 10 minutes to deepen the flavors.
Strain the syrup through a fine-mesh sieve into a clean jar or bowl, pressing on solids to extract as much liquid as possible. Discard solids. Let syrup cool to room temperature before using. Refrigerate any unused syrup (keeps 2 weeks).
Margarita
Prepare the glass
Rub the rim of a rocks or coupe glass with a lime wedge. Dip the rim into coarse salt or Tajín to coat. Set glass aside.
If you want a faint chili infusion, muddle the 1/2 tsp thinly sliced Thai chili lightly in the shaker (or skip muddling if you prefer less heat). Be careful not to over-muddle the seeds, which increases heat.
In a cocktail shaker, combine 6 tablespoons blanco tequila, 3 tablespoons fresh lime juice, 1.5 tablespoons of the cooled tamarind-ginger-lemongrass syrup, and 1 tablespoon coconut cream (if coconut cream is thick, shake it first with a little warm water or whisk until pourable). Add the muddled chili (if using).
Add a generous scoop of ice (about 1 cup) to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosty.
Float a single thin slice of Thai chili on the surface and add a lemongrass ribbon or torn lime leaf for aroma. Garnish with a lime wheel on the rim.
Serve & Notes
Taste and, if desired, adjust: add 1/2 teaspoon more syrup for sweetness or a splash more lime for brightness. If the coconut note is too strong, reduce to 1/2 tablespoon next time.
Estimated yield: the recipe makes about one cocktail (serves 1). For multiple servings, multiply ingredients; syrup scales 1:1 with water and sugar if you want larger batches.
