Cocktail

1

Prepare glass

Select a highball or Collins glass (about 12–14 oz). Fill the glass with fresh cubed ice to chill while you build the cocktail. Set aside a small space for the garnish.

2

Build cocktail

In a cocktail shaker, combine 1.5 oz Campesino Silver rum, 0.75 oz Campesino Aged rum, 0.5 oz Kraken dark spiced rum, 2 oz fresh orange juice, 0.5 oz fresh lime juice, and 0.25 oz simple syrup. Add 2 dashes of Angostura bitters.

3

Shake

Add a small handful of ice to the shaker (not the full cup). Shake vigorously for 10–12 seconds until the shaker feels cold to the touch and the ingredients are well combined.

4

Assemble

Discard the ice used to chill the glass if desired. Strain the shaken mixture into the prepared glass over fresh ice (fill to about 3/4 full).

5

Top with ginger beer

Gently top the cocktail with 3 oz chilled ginger beer. Stir once gently with a bar spoon (1–2 slow strokes) to incorporate the ginger beer without losing too much carbonation.

6

Finish and garnish

Express an orange peel over the drink or float an orange wheel on top and add a lime wedge or peel to the rim. Optionally add an extra dash of bitters on the foam or surface for aroma.

7

Serve

Serve immediately with a straw or stirrer. Enjoy responsibly.
