1

Prepare the glass (optional)

If you like a subtle savory accent, pour the smoked salt or flaked sea salt onto a small plate. Rub the rim of an old-fashioned glass lightly with a lime wedge and dip the rim into the salt to coat. Set the glass aside and chill briefly (or fill with ice to chill while you prepare the cocktail).

2

Combine ingredients

In a cocktail shaker, add 2 oz reposado tequila, 0.75 oz fresh lime juice, 0.5 oz agave syrup, 0.5 oz orange liqueur and 2 dashes Angostura bitters.

3

Add ice and shake

Fill the shaker with ice (about 1 cup), secure the lid, and shake vigorously for 12–15 seconds until the shaker feels cold and slightly frosty.

4

Strain and serve

Discard the chilling ice from the prepared glass if used. Place one large ice cube (or a few fresh ice cubes) into the glass. Double-strain the shaken cocktail over the ice into the chilled, salted glass using a Hawthorne and fine strainer if available to catch small ice shards and citrus pulp.

5

Garnish and finish

Express a lime peel over the drink to release oils, wipe the rim with the peel if desired, then drop the peel into the drink or perch a lime wheel on the rim. Serve immediately.
