Method
Goat Cheese Spread
Bring ingredients to room temperature
Remove the goat cheese and butter from the refrigerator 20–30 minutes before starting so they soften and blend easily.
Combine base ingredients
In a medium mixing bowl, place the softened goat cheese and softened butter. Using a sturdy spoon, rubber spatula, or electric hand mixer on low, begin to blend until mostly smooth.
Adjust texture
Add the milk or cream, 1 tablespoon at a time, while continuing to mix until the spread reaches a smooth, spreadable consistency. Scrape down the sides of the bowl as needed.
Optional mix-ins
If using chives or scallions, chopped nuts, or red pepper flakes, fold them into the spread now, reserving a small pinch of chives and a few chopped nuts for garnish if desired.
Chill to meld flavors
Transfer the spread to a small serving bowl, cover tightly, and refrigerate for at least 30 minutes to let flavors meld. The spread can be served at room temperature as well—remove from fridge 15 minutes before serving for best texture.
To serve
Garnish and finish: just before serving, drizzle the spread lightly with additional olive oil or honey if desired. Sprinkle reserved chives, chopped nuts, a pinch of red pepper flakes, and cracked black pepper on top for color and texture.
Storage: leftover spread will keep covered in the refrigerator for up to 5 days. Bring to room temperature and stir before serving again.
