Crack and whisk

Crack the eggs into a medium bowl. Add the whole milk, grated Dublin cheddar, sea salt, and freshly ground black pepper. Using a fork or whisk, beat just until yolks and whites are combined and mixture is slightly frothy (about 20–30 seconds). Do not overbeat — you want a mixture with some air but not completely foamy.

Rest

Let the beaten eggs rest at room temperature for 5 minutes while you prepare the pan. This helps the eggs cook more gently and evenly.

Heat pan

Place a nonstick skillet (10–12 inch) over medium-low heat. Add the unsalted butter and olive oil. Warm until the butter has melted and just begins to foam but is not browning (about 1–2 minutes). The oil raises the butter's smoking point and gives a glossy finish.

Cook eggs slowly

Pour the rested egg mixture into the warm skillet. Let it sit undisturbed for about 20 seconds so the edges begin to set. Using a heatproof spatula, push the set edges gently toward the center, allowing uncooked egg to flow to the pan. Continue to move the eggs in slow, gentle folds, scraping the bottom, keeping the pan over low to medium-low heat. Cook until the eggs are mostly set but still glossy and slightly runny (about 4–6 minutes total). For creamier eggs, remove from heat when still slightly underdone; residual heat will finish them.

Finish and season

As soon as the curds are soft and creamy, remove the pan from the heat. Add the snipped chives and fold them through gently. Taste and adjust seasoning with additional salt and pepper if needed. If you prefer a more pronounced cheddar presence, sprinkle an extra tablespoon of grated cheddar on top and briefly cover the pan for 30 seconds to melt.

Toast bread

While the eggs cook, toast the Irish brown bread or sourdough slices until golden. If desired, spread a thin layer of butter on the warm toast.

Plate and garnish

Divide the toast between four plates (or serve two slices per person for hearty portions). Spoon the scrambled eggs generously over or alongside the toast. Top with microgreens or watercress and a light sprinkle of flaky sea salt. Serve immediately while warm.
