Grilled Caesar Directions

1

Prepare the Parmesan Custard

In a mixing bowl, whisk together the eggs, heavy cream, grated Parmesan cheese, minced garlic, lemon juice, salt, and black pepper until well combined. Pour the mixture into a baking dish.

2

Bake the Custard

Preheat your oven to 350°F (175°C). Place the baking dish in the oven and bake for 25-30 minutes or until set and lightly golden on top. Remove from the oven and let cool slightly.

3

Grill the Sourdough

While the custard is baking, heat a grill or grill pan over medium heat. Brush each side of the sourdough slices with olive oil. Grill the bread for 2-3 minutes on each side until toasted and grill marks appear.

4

Grill Romaine Lettuce

Cut the romaine lettuce in half lengthwise. Brush the cut sides with olive oil and grill for 1-2 minutes until slightly wilted and grill marks appear.

5

Assemble the Dish

Place the grilled sourdough on plates, top with a portion of the Parmesan custard, and add the grilled romaine. Garnish with anchovy fillets and additional grated Parmesan if desired.
