Prepare the Short Ribs

Season the beef short ribs with salt and black pepper. Heat the olive oil in a large heavy pot over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove from pot and set aside.

Create the Broth

In the same pot, add the minced garlic and sliced red onions. Sauté until the onions are translucent. Pour in the red wine and scrape the bottom of the pot to deglaze. Add the beef broth, thyme, and bay leaves.

Cook the Ribs

Return the seared short ribs to the pot, cover, and simmer on low heat for 3-4 hours until fork-tender.

Make the Mashed Potatoes

While the ribs are cooking, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk, cream cheese, and salt to taste.

Sauté the Vegetables

In a separate pan, melt the butter and sauté the mixed vegetables until tender, about 5-7 minutes.

Prepare the Gravy

Once the ribs are cooked, remove them from the pot. Strain the liquid and return it to the pot. Simmer until thickened to create the red onion gravy.

Serve

Plate the mashed potatoes, top with short ribs, pour over the gravy, and serve with sautéed veggies on the side.
