Cocktail Preparation

Prepare the Black Pepper Honey Simple Syrup

In a small saucepan, combine equal parts honey and water. Add freshly cracked black pepper to taste. Heat over low until honey dissolves, then let cool.

Mash the Blueberries

In a cocktail shaker, add fresh blueberries and gently mash them using a muddler or the back of a spoon to release their juices.

Mix the Cocktail

Add the Benchmark Bourbon, fresh squeezed lemon juice, and black pepper honey simple syrup to the shaker with the mashed blueberries.

Shake

Fill the shaker with ice, close tightly, and shake vigorously for about 15 seconds.

Strain

Strain the mixture into a rocks glass filled with ice.

Add Bitters

Add 2 dashes of hibiscus bitters on top of the drink.

Garnish and Serve

Garnish with fresh blueberries and a twist of lemon peel. Serve immediately.
