Method
Cake Preparation
Prepare the Batter
Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk together eggs, buttermilk, oil, and vanilla. Combine wet and dry ingredients and mix until well blended.
Bake the Cake
Pour the batter into a greased and floured cake pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
Mocha Cream Preparation
Whip the Cream
In a bowl, whip the heavy cream until soft peaks form. Gradually add espresso, powdered sugar, and cocoa powder. Continue whipping until stiff peaks form. Refrigerate until ready to use.
Coffee Crumble Preparation
Make the Crumble
In a bowl, mix flour, brown sugar, coffee granules, and salt. Cut in butter until the mixture resembles coarse crumbs. Spread on a baking sheet and bake at 350°F (175°C) for about 10-15 minutes until golden brown. Allow to cool.
Buttercream Frosting Preparation
Prepare the Frosting
Beat the softened butter until creamy. Gradually add powdered sugar, then mix in heavy cream and vanilla extract until the frosting is smooth and fluffy.
Melt the butter and mix it with brown sugar, flour, corn syrup, and vanilla until well combined. Drop spoonfuls onto a parchment-lined baking sheet and bake at 350°F (175°C) for 8-10 minutes until edges are golden. Let cool before serving.
