Method
Honey Syrup
Combine honey and water in a small saucepan over medium heat. Stir gently until honey dissolves and the mixture is smooth, about 2–3 minutes. Do not boil.
Increase heat slightly to bring the mixture to a gentle simmer (small bubbles at the edge) and cook, stirring occasionally, for 3–4 minutes to slightly darken and concentrate the honey — this produces a subtle caramelized note. Watch carefully so it doesn't scorch.
If using lemon zest for infusion, add it in the last minute of simmering, then remove from heat.
Let the syrup cool to room temperature, strain out zest, transfer to a clean jar, and refrigerate. Syrup will keep 2–3 weeks refrigerated.
Cocktail
Add Hendrick's Gin, fresh lemon juice, and 0.75 oz caramelized honey syrup to a cocktail shaker.
Fill the shaker with ice (about 1 cup) and dry-shake (no ice) for 5–7 seconds if you prefer extra silky texture, then add ice and shake vigorously for 10–15 seconds until the outside of the shaker is very cold.
Discard ice water from the chilled glass. Double-strain the cocktail into the chilled glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any foam.
Express a lemon twist over the drink (pinch the peel to release oils) and rub the rim, then drop the twist in as garnish.
Serve immediately.
