Melt butter

In a medium stainless steel or heavy saucepan set over medium heat, add the 4 tbs unsalted butter. Allow it to melt completely, swirling the pan so the butter does not brown. Remove from direct heat briefly if it begins to foam heavily.

Dissolve sugar

Add the 1 cup granulated sugar to the melted butter along with 2 tbs water and 2 tbs light corn syrup. Return to medium-low heat and stir gently with a silicone spatula or wooden spoon until the sugar dissolves and the mixture is smooth (about 2–3 minutes). Do not vigorously boil.

Simmer to combine

Bring the mixture to a very gentle simmer for 2–4 minutes, stirring occasionally, until the syrup is glossy and slightly thickened. If you have a candy thermometer, target about 225–230°F (soft‑ball start) but exact temperature isn't necessary for this application.

Season and finish

Remove the pan from heat. Stir in 1 tsp sea salt and 1 tsp vanilla extract. If using, add 1 tsp fresh lemon juice to brighten the flavor. Let the syrup rest for 1–2 minutes so it thickens slightly but remains pourable.

Prepare pan and item

If using rolls, halve them. If using fruit (apple slices), pat them dry. Lightly brush a large nonstick skillet with 1 tsp vegetable oil and warm over medium heat until shimmering.

Toast briefly (optional)

Add the bread halves or fruit pieces to the skillet, cut side down (for bread) or flesh side down (for fruit). Toast 1–2 minutes until surface is lightly golden — this helps the sugar adhere and adds texture. Remove and set on a heatproof plate.

Coat with syrup

Return skillet to low heat and pour 2–3 tbs of the warm buttersugar syrup into the pan. Add a few pieces of the prepared item (do not overcrowd). Spoon the syrup over each piece, or gently roll/turn pieces in the syrup, until evenly coated and glossy, about 30–45 seconds. The syrup should cling and begin to set as it cools.

Caramelize briefly (optional)

If you want a deeper, slightly caramelized finish, increase heat to medium-low and cook for an additional 30–60 seconds, tilting the pan and spooning syrup over the pieces. Watch carefully to avoid burning—remove immediately when you see a deeper amber and syrup thickening.

Transfer to wire rack

Using tongs or a fork, transfer coated pieces to a wire rack (set over a baking sheet) to cool and let any excess syrup drip off. If you prefer a crisp shell, place the rack in a cool, low-humidity area to set for 10–15 minutes.

Finishing

Dust and serve

Once the syrup has set slightly, dust the pieces lightly with 2 tbs powdered sugar if desired. Serve warm or at room temperature. Leftovers (if any) can be stored in an airtight container at room temperature for up to 24 hours — the coating will soften over time.
