Cook crepes

Heat a nonstick skillet or crepe pan over medium heat and lightly brush with butter. Pour about 1/4 cup batter into the center, immediately lift and tilt the pan in a circular motion to spread a thin even layer. Cook 30–45 seconds until the edges lift and the underside is lightly golden, then flip with a spatula and cook 10–15 seconds more. Transfer to a plate and keep warm under a towel. Repeat with remaining batter to make ~8 crepes. Stack crepes with parchment between if storing briefly.

White Chocolate Ganache (silky tart)

Prepare ganache

Chop 8 oz white chocolate and place in a heatproof bowl. Heat 1/2 cup heavy cream just until it begins to simmer (do not boil). Pour the hot cream over the chocolate and let sit 1 minute to soften, then gently whisk until smooth and glossy. Stir in 2 tablespoons plain Greek yogurt and 1/2 teaspoon lemon juice to introduce a slight tartness and silken texture. If mixture is too thick to spread, warm briefly over a double boiler or microwave in 10-second bursts, whisking in between until spreadable but still cool enough to handle.

Prepare raspberries

Gently wash 2 cups fresh raspberries and drain well on paper towels. Reserve several whole berries for garnish (about 1/2 cup). For the remaining raspberries, lightly macerate about 1 cup with 2 teaspoons raspberry liqueur and 1 tablespoon of the strawberry sauce (optional) for 10–15 minutes to release juices—this creates a juicy layer that will soften the crepes and intensify flavor. Keep remaining raspberries whole for texture and visual contrast.

Warm strawberry sauce (optional)

If using a chilled strawberry sauce, warm 1/4 cup very briefly in a small saucepan or microwave so it’s easy to squirt or drizzle. Transfer to a squeeze bottle or small spoon for controlled placement.

Amaretto topping (whipped)

Make amaretto whipped cream

Chill a medium bowl and beaters for 5–10 minutes in the freezer. Pour 1/2 cup heavy whipping cream into the chilled bowl and whip on medium-high speed until soft peaks form. Add 1 tablespoon powdered sugar, 1 teaspoon amaretto liqueur, and 1/8 teaspoon almond extract (if using). Continue to whip to medium-stiff peaks, being careful not to overbeat. Taste and adjust sweetness or booze level lightly—keep whipped cream slightly soft so it can be piped or dolloped.

Garnish & assembly

Layer crepes

Place one warm crepe on a serving plate. Spread a thin layer (about 2 tablespoons) of the white chocolate ganache over the crepe, leaving a 1/2-inch border. Scatter a few whole raspberries and a spoonful of the macerated raspberries across the ganache. Add a second crepe on top and repeat the process. Continue layering until you have used 6–8 crepes, finishing with a crepe topped with ganache.

Add raspberry liquor tease

Optionally, very lightly brush or mist the layered crepes with the remaining 2 teaspoons raspberry liqueur (use sparingly so crepes don’t become soggy). Alternatively, dip a pastry brush into the liqueur and lightly ‘spank’ the top crepe in a few spots for aromatic hits.

Top, bond & finish

Pipe or dollop the amaretto whipped cream onto the center of the top crepe. Arrange the reserved extra berries around and atop the cream. Finish with a squirt or drizzle of 1/4 cup warmed strawberry sauce across the stack and berries for a glossy, bonded appearance. Dust lightly with 1 teaspoon confectioners' sugar and tuck 3–4 mint leaves around for color.

Serve

Serve immediately while crepes are slightly warm and ganache still silky. Provide a dessert fork and small spatula to slice the layered crepes. Note: if serving to guests, do not leave someone alone who is under influence of liqueur—monitor consumption. Leftovers: store covered in the refrigerator for up to 24 hours; ganache may firm up, bring to room temperature before serving.
