Method
Cantaloupe Mousse Preparation
Prepare Gelatin
In a small bowl, sprinkle gelatin over water and let it bloom for about 5 minutes. Then, heat it gently until dissolved.
Combine Ingredients
In a large bowl, whisk together the cantaloupe puree, dissolved gelatin, sugar, and vanilla extract until well combined.
Whip Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cantaloupe mixture until fully incorporated.
Chill
Transfer the mousse to serving dishes and refrigerate for at least 2 hours to set.

Preheat Oven
Preheat your oven to 350°F (175°C).
Mix Ingredients
In a bowl, combine shredded coconut, flour, brown sugar, and melted butter. Mix until crumbly.
Bake

Cool
Remove from oven and let cool completely.

Freeze
Pour the mixture into a shallow container and freeze for about 2 hours, scraping with a fork every 30 minutes until fluffy.
