Method

Brewing Process

1

Mashing

Heat 3 gallons of filtered water to 165°F (74°C) and add the grains. Maintain the temperature for 60 minutes, stirring occasionally.

2

Sparging

After mashing, sparge the grains with an additional 2 gallons of hot water (170°F/77°C) to extract as much sugar as possible.

3

Boiling

Bring the wort to a boil and add Nugget hops. Boil for 60 minutes, adding Fuggle hops in the last 15 minutes.

4

Cooling

Cool the wort rapidly using a wort chiller to approximately 70°F (21°C).

5

Fermentation

Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Ferment at 50-55°F (10-13°C) for 2-3 weeks.

6

Bottling

After fermentation is complete, dissolve priming sugar in 2 cups of boiling water and let it cool. Add to the beer before bottling.

7

Conditioning

Bottle the beer and condition at room temperature for 1-2 weeks before refrigerating.
