Preparation

Prepare the Steaks

Remove the steaks from the refrigerator and let them come to room temperature for about 30-60 minutes before cooking.

Season the Steaks

Generously season both sides of the steaks with kosher salt and freshly ground black pepper.

Preheat the Skillet

Place a cast iron skillet or a heavy-bottomed pan over high heat and let it get very hot, about 5 minutes.

Add Oil

Add vegetable oil to the hot skillet, ensuring the oil coats the bottom of the pan.

Sear the Steaks

Carefully place the steaks in the skillet. Sear without moving them for 3-4 minutes until a crust forms.

Flip the Steaks

Using tongs, flip the steaks and cook for another 3-4 minutes for medium-rare. Adjust the time based on your desired doneness.

Optional Flavoring

For additional flavor, add a sprig of fresh rosemary and crushed garlic cloves to the skillet, and add butter to baste the steaks for the last minute of cooking.

Rest the Steaks

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.

Slice against the grain and serve with your choice of sides.
