Method
Prepare Strawberry Purée
Wash and hull
Rinse 1 cup fresh strawberries under cold water. Remove the stems and hull by cutting out the green caps and any white core if desired.
Blend
Place the hulled strawberries in a blender or food processor. Add 1 teaspoon simple syrup if you prefer a sweeter drink (optional). Blend on high until smooth, about 20–30 seconds. If you want a very smooth liquid, strain the purée through a fine-mesh sieve into a small bowl, pressing with the back of a spoon. Reserve about 3/4 cup of purée for the recipe; any extra can be refrigerated for another use.
Mix the Drink
In a large measuring cup or pitcher, combine 2 cups organic coconut water and 1 cup fresh lemonade. Stir gently to combine.
Add about 3/4 cup strained strawberry purée (or unstrained if you prefer texture) to the coconut water–lemonade mixture. Stir gently to incorporate a pink, even color. Taste and, if needed, add up to 1 teaspoon simple syrup for extra sweetness and up to 1 teaspoon fresh lime juice to brighten flavors. Stir again.
Chill briefly if desired: for best flavor, refrigerate the mixture for 10–15 minutes to let flavors meld, or proceed immediately for a chilled-on-ice serving.
Assemble & Serve
Fill two serving glasses with about 1/2 cup ice each (total ~1 cup used). Divide the Island Fusion mixture between the glasses.
Garnish each glass with 2 strawberry slices and 2 mint leaves on top. Optionally, add a thin lime wheel on the rim.
Serve immediately with a straw. Stir briefly just before sipping if the purée has settled.
