Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients

In a separate bowl, beat the large eggs and then mix in the buttermilk and melted unsalted butter until smooth and well combined.

Combine Ingredients

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the blueberries.

Prepare the Griddle

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.

Cook Pancakes

Using a ladle, pour about 1/4 cup of pancake batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.

Serve

Serve the pancakes warm topped with additional blueberries, speculoos spread, and chantilly cream as desired.
