Prepare the Bacon
Lay the bacon strips flat on a cutting board. Use a sharp knife to cut the bacon into desired sizes, usually about 4-6 inches long.
Make the Rub
In a small bowl, combine the black pepper, brown sugar, smoked paprika, garlic powder, onion powder, and salt. Mix well until all ingredients are evenly distributed.
Season the Bacon
Sprinkle the rub mixture evenly over both sides of the bacon strips. Make sure to coat them thoroughly for maximum flavor.
Prepare the Smoker
Soak the wood chips in water for about 30 minutes. This will help them create more smoke when heated. Drain the chips and prepare your smoker according to the manufacturer's instructions.
Smoke the Bacon
Place the bacon strips directly on the smoker rack or on a piece of foil if you prefer. Add the soaked wood chips to the smoker box or directly on the hot coals, and close the smoker lid.
