Prepare the Onions

Peel and thinly slice the cipollini onions. Set aside.

Cook the Bacon

In a skillet over medium heat, add the bacon lardons and cook until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

Preheat the Oven

Preheat your oven to 220°C (428°F). If using a pizza stone, place it in the oven while preheating.

Roll Out the Dough

On a lightly floured surface, roll out the pizza dough into a thin rectangle, approximately 10x14 inches. Transfer it to a parchment-lined baking sheet or a pizza peel if using a stone.

Assemble the Tarte Flambee

Spread the crème fraîche evenly over the rolled-out dough. Distribute the cooked bacon lardons and sliced cipollini onions on top. Tear the taleggio cheese into small pieces and scatter them over the top.

Season

Sprinkle with salt and freshly cracked black pepper to taste.

Bake

Transfer the prepared tarte flambee to the oven (or onto the hot pizza stone) and bake for about 12-15 minutes, or until the edges are golden brown and crispy.

Drizzle and Serve

Remove from the oven and drizzle with olive oil. Slice and serve hot.
