Citrus & Fruit Bases
Juice the citrus
If not using store-bought juice, roll the oranges and limes on the countertop to loosen juices. Cut the oranges and limes in half and juice them until you have 1 cup orange juice and 1/4 cup lime juice. Strain through a fine mesh strainer into a bowl to remove pulp and seeds if a smoother texture is desired.
Combine the strained orange juice, lime juice, and 1/2 cup chilled pineapple juice in a mixing pitcher or large measuring cup. Stir to homogenize.
Sweetener & Balance
Add 2 tablespoons agave syrup to the juice mixture. Stir thoroughly until the agave is fully incorporated. Taste and adjust: add up to 1 additional teaspoon agave if you prefer sweeter, or an extra 1 teaspoon lime if you prefer tarter.
Carbonation & Finish
Fill two serving glasses (or one large pitcher) with about 1/2 cup ice per glass (or 1 cup ice for pitcher). Divide the juice-agave mixture evenly between glasses (about 3/4 cup per glass). Top each with 1/2 cup chilled club soda, pouring gently to preserve carbonation. Give a gentle stir (1–2 strokes) to integrate soda without flattening.
If making in advance for a group, keep the juice mixture chilled separately and add chilled soda and ice just before serving to maintain fizz.
