Toast bread (optional)
Place bread slices butter-side-down in the hot skillet. Toast 1–2 minutes until golden, then flip and toast other side 30–45 seconds. Remove and place on cutting board buttered-side up.
Assemble sandwich
On one bread slice (toasted or not), spread mayonnaise evenly. On the other slice, spread mustard if using. Layer 4 slices of turkey or ham on the mayonnaise-spread slice, overlapping slightly to cover the bread.
Place 2 slices of cheddar or provolone on top of the meat. If you prefer a warm melt, transfer the assembled open-faced sandwich to the skillet or a preheated oven (200°C / 400°F) for 1–2 minutes until cheese softens and begins to melt.
Add optional toppings: place lettuce leaf, tomato slices, and pickles on top of the cheese. Season tomato with a pinch of salt and a grind of black pepper.
Close the sandwich with the second slice of bread (mustard side down), press gently, and slice diagonally or down the middle.
Serving
Serve immediately with chips, a pickle spear, or a side salad. If leftover, wrap tightly and refrigerate for up to 24 hours for best quality.
