Prepare equipment

Chill a coupe or martini glass by filling it with ice water. Gather a cocktail shaker, jigger, bar spoon, and a fine strainer (if available).

Dry shake (if using egg white)

Add the Plymouth gin, fresh lemon juice, simple syrup, orange liqueur and egg white to the shaker. Seal and shake vigorously without ice for 15 seconds. This emulsifies the egg white and creates a silky foam.

Wet shake

Open the shaker, add ice cubes (about 6), reseal and shake vigorously for 12–18 seconds until the shaker is very cold to the touch and well chilled.

Strain

Dump the ice water from the chilled glass. Double strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer (this removes small ice shards and yields a smooth texture).

Finish and garnish

If using, add one light dash of Angostura bitters onto the foam and use a toothpick to create a small pattern, or simply leave plain. Express a lemon twist over the drink (pinch the peel to release oils) and drop it into the glass or rest it on the rim.
