Preparation
Prepare the Ingredients
Slice the chorizo sausage into 1 cm thick rounds. Finely chop the onion and garlic cloves.
Cooking
Sauté Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.
Cook the Chorizo
Increase the heat to medium-high and add the sliced chorizo to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chorizo is browned and slightly crispy.
Add Cider and Seasonings
Pour the dry cider into the skillet, and add the bay leaves and thyme. Stir to combine. Bring the mixture to a simmer.
Simmer
Reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
Serving
Plate and Serve
Once cooked, remove the bay leaves and serve the chorizo a la sidra warm, garnished with fresh thyme if desired. Enjoy!
