Preparation

1

Clean the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards by pulling them off firmly. Discard any mussels that are open and do not close when tapped.

2

Prepare the Base

In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

3

Add Spices

Stir in the red chili flakes, salt, and black pepper to the garlic, allowing the mixture to cook for another 30 seconds.

4

Combine Liquids

Pour in the chicken broth and white wine, stirring to combine all ingredients. Bring the mixture to a simmer.

5

Add Mussels

Carefully add the cleaned mussels to the pot, cover with a lid, and let them steam for about 5-7 minutes, or until the mussels have opened up.

6

Finish and Serve

Remove the pot from heat, and stir in the chopped parsley and lemon juice. Serve immediately with crusty bread for dipping.
