Chill the Glass

Start by chilling a rocks glass. Fill it with ice and set it aside while you prepare the cocktail.

Prepare the Glass

In the chilled rocks glass, rinse with absinthe. To do this, pour a small amount (about 1 tsp) of absinthe into the glass, swirl it around to coat the inside, then discard the excess.

Mix the Cocktail

In a mixing glass filled with ice, combine the rye whiskey, simple syrup, and Peychaud's bitters. Stir well for about 20 seconds until the mixture is chilled.

Strain

Remove the ice from the prepared rocks glass and strain the cocktail mixture into the glass.

Garnish

Express the lemon peel over the drink by holding it over the glass and giving it a gentle twist to release the oils. Drop the peel into the drink as a garnish.
