Sauté the Sausage

In a large pot, heat the olive oil and butter over medium heat. Add the Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.

Cook the Vegetables

In the same pot, add onion, green bell pepper, celery, and garlic. Sauté for about 5 minutes or until the vegetables are softened.

Add the Liquids

Pour in the chicken broth and water. Stir to combine and bring to a simmer.

Season the Gumbo

Add the bay leaves, Cajun seasoning, salt, black pepper, and cayenne pepper. Stir well and let it simmer for 20 minutes.

Add the Sausage and Okra

Return the cooked sausage to the pot along with the sliced okra and canned tomatoes. Stir to combine and let simmer for another 10 minutes.

Add Seafood

Finally, add the shrimp and crab meat. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Serving

Garnish and Serve

Remove the bay leaves from the gumbo. Serve hot in cups or bowls, garnished with sliced green onions and chopped parsley.
