Strawberry Puree (if making fresh)

Prepare puree

Hull and roughly chop 4 medium strawberries (reserve one for garnish). Place the chopped strawberries in a blender or food processor with 1 teaspoon of fresh lime juice and 1 teaspoon of simple syrup. Puree until smooth, about 10–15 seconds. If a smoother texture is desired, pass the puree through a fine mesh strainer into a small bowl, pressing with the back of a spoon to extract liquid. Yield should be about 1–1.5 oz of puree.

Mixing the Cocktail

Combine ingredients

Fill a cocktail shaker halfway with ice. Add 2 oz Elvelo Blanc Tequila, 0.75 oz Aperol, 0.75 oz fresh lime juice, 1 oz strawberry puree, and 0.25 oz simple syrup to the shaker.

Shake

Secure the shaker and shake vigorously for 10–15 seconds, until the outside of the shaker is cold and the mixture is well combined and slightly frothy from the puree.

Strain

Fill a chilled coupe or rocks glass with fresh ice (if serving on the rocks) or leave it dry for a coupe. Double-strain the cocktail into the glass using a Hawthorne and a fine mesh strainer to remove seeds and pulp for a smooth texture.

Garnish & Serve

Thread a thin slice of the reserved strawberry and a lime wheel on the rim of the glass or float the strawberry slice on top. Add a mint sprig if desired for aroma. Serve immediately.
