Measure 1 tablespoon (0.0625 cups) of whole bean coffee per 12-cup airpot. Grind to a medium-coarse texture appropriate for drip brewing. If using pre-ground, ensure it is labeled for drip coffee.

Prepare water

Heat 12 cups (about 2.8 liters) of fresh, filtered water to 195–205°F (90–96°C). If you do not have a thermometer, bring water to a boil and let it sit 30 seconds before brewing.

Set up brewer

Place a clean paper or reusable filter in the basket of your 12-cup drip coffee maker or urn. Rinse the paper filter with hot water to remove any papery taste and preheat the brewer; discard rinse water.

Brew

Add the measured ground coffee to the filter. Pour the heated water into the brewer's reservoir and start the brew cycle. For urns or manual pour-over: evenly saturate grounds and allow bloom for 30 seconds, then continue pouring slowly to finish within 3.5–4.5 minutes total contact time.

Transfer and maintain

Once brewing is complete, transfer coffee into a pre-warmed 12-cup thermal airpot or keep warm on the brewer's hot plate for service. If using a hot plate, monitor temperature and avoid boiling for prolonged periods to reduce bitterness—keep between 175–185°F (80–85°C).

Optional add-ins (for customer self-service)

Arrange milk, half-and-half, sugars, simple syrup, sugar substitute packets, and flavored syrups in labeled containers beside the airpot. Keep dairy refrigerated until needed and replace small batches regularly to ensure freshness.

If providing hot milk or steamed milk, heat milk to 150–160°F (65–70°C) and stir before service; avoid scalding (above 170°F). Offer plant-based milks at ambient or gently warmed temperature.
