In a large bowl, whisk together 2.5 cups all-purpose flour, 2 cups granulated sugar, 2 tablespoons unsweetened cocoa powder, 1 teaspoon baking soda, 1/2 teaspoon baking powder, and 3/4 teaspoon fine salt until evenly combined. Set aside.

Wet ingredients

In the bowl of a stand mixer fitted with the paddle (or in a large bowl with an electric mixer), beat 1/2 cup room-temperature unsalted butter and 1/2 cup vegetable oil on medium speed for about 1 minute until smooth. Add 2 large eggs one at a time, mixing 20–30 seconds after each addition until incorporated. Mix in 1 tablespoon distilled white vinegar, 1 teaspoon white vinegar, and 1.5 teaspoons vanilla extract.

Combine batter

With the mixer on low, add the dry ingredients in three additions alternately with 1 cup room-temperature buttermilk: begin and end with the dry ingredients (dry-wet-dry-wet-dry). Mix each addition just until incorporated; avoid overmixing. Add 2 tablespoons red food coloring and mix on low until the color is uniform. Scrape the bowl and fold gently by hand if needed to ensure even color.

Final reaction

Stir in 1 tablespoon distilled white vinegar and mix very briefly — this helps the cake rise and gives a classic red velvet tang. Scrape the batter into the prepared pans, dividing evenly (use a scale or measure for even layers). Smooth the tops with an offset spatula.

Bake

Bake in the preheated 350°F (175°C) oven for 25–30 minutes for 8-inch pans (or 20–25 minutes for 6-inch pans). Bake until a toothpick inserted in the center comes out with a few moist crumbs and the cake springs back lightly when touched.

Beat base

In a large bowl or stand mixer fitted with the paddle, beat 8 oz room-temperature cream cheese and 1/2 cup room-temperature unsalted butter on medium speed until completely smooth and homogenous, about 2–3 minutes. Scrape sides as needed.

Add sugar and flavor

Reduce mixer to low and gradually add 3 cups sifted powdered sugar, 1 cup at a time, mixing until combined after each addition to avoid a sugar cloud. Once incorporated, add 1 teaspoon vanilla extract and 1/4 teaspoon fine salt. Increase speed to medium-high and beat for 30–45 seconds for a lighter texture.

Adjust consistency

If frosting is too thick, add up to 1 tablespoon heavy cream, one teaspoon at a time, until spreading consistency is reached. If too thin, add additional sifted powdered sugar 2–4 tablespoons at a time.

Chill briefly

Chill frosting 10–15 minutes if it feels too soft to spread; beat briefly before using to smooth out.

Level and layer

If cake layers have domes, level them with a serrated knife or cake leveler to create even surfaces. Place the first layer on your cake plate or turntable. Apply a layer of frosting about 1/3–1/2 inch thick, smoothing to the edges.

Place the second cake layer on top and repeat frosting. For a three-layer cake, repeat with the third layer. Use a thin crumb coat (a light layer of frosting around the sides and top) to trap crumbs: apply a thin coat, chill 15–20 minutes to set.

Apply a thicker final coat of cream cheese frosting, smoothing the sides and top with an offset spatula. If desired, press 1/2 cup cake crumbs or chocolate shavings around the sides or on top, and decorate with fresh berries.
