Make simple syrup
Combine granulated sugar (3 tbs) and hot water (1 cup) in a heatproof measuring cup or small saucepan. Stir until the sugar is completely dissolved, about 1–2 minutes. Remove from heat and let the syrup cool slightly (5 minutes).
Juice the lemons
If using fresh lemons, roll them firmly on the countertop to loosen juices then cut in half and juice until you have 1 cup of fresh lemon juice. Strain the juice through a fine sieve into a pitcher to remove seeds and excess pulp if you prefer a clearer lemonade.
Combine and dilute
Add the cooled simple syrup to the pitcher with the lemon juice. Pour in the cold water (3 cups) and stir thoroughly to combine. Taste and adjust: if too sweet, add up to 1/2 cup more cold water; if too tart, add 1–2 tbs more sugar dissolved in a little hot water or more simple syrup.
Chill and serve
Add ice cubes (about 2 cups) to the pitcher or directly into glasses. Pour the lemonade over ice, garnish each glass with lemon slices and 2–3 mint leaves if using. Serve immediately or refrigerate the pitcher for up to 48 hours. Stir before serving if separation occurs.
