Brisket Sandwich Preparation

Prepare the brisket

If the brisket is cold, thinly slice the reheated brisket and season lightly with salt and pepper. Heat in a skillet over medium heat just until warmed through, about 3-5 minutes.

Toast buns with butter

Melt butter in a skillet over medium heat. Lightly toast the cut sides of the brioche buns until they are golden and fragrant, about 1-2 minutes. Set aside.

Caramelize onions

In the same skillet, add a touch of oil if needed and the sliced onions. Cook over medium heat, stirring occasionally, until deeply caramelized and sweet, about 10-12 minutes. They should be soft and richly browned. Lightly season with a pinch of salt.

Warm Bubba's BBQ sauce

In a small saucepan, gently warm Bubba's BBQ sauce over low heat, stirring occasionally, until it reaches a pourable consistency (about 3-5 minutes).

Prepare pickle slices

Arrange dill pickle slices on a plate and keep ready for assembly. If desired, pat dry with a paper towel to remove excess moisture.

Assemble the sandwich

Spread a thin layer of BBQ sauce on the bottom bun. Layer warm brisket, caramelized onions, and dill pickle slices. Drizzle or brush additional BBQ sauce over the brisket. Top with the upper bun.

Season and serve

If desired, sprinkle a touch more salt and pepper on the outside. Serve immediately while warm. This sandwich pairs well with extra pickles on the side.
