Activate Yeast

In a small bowl, combine warm water (about 110°F) and active dry yeast. Let it sit for about 5-10 minutes until foamy.

Mix Ingredients

In a large mixing bowl, combine flour, sugar, and salt. In another bowl, mix activated yeast, warm milk, and eggs. Slowly add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead Dough

Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Add softened butter and knead until incorporated.

Let Dough Rise

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Shape Beignets

Once risen, punch down the dough and roll it out on a floured surface to about 1/4 inch thick. Cut into squares (about 2 inches wide).

In a saucepan, bring 4 cups of water to a boil. Add chicory root and coffee grounds. Simmer for about 5-7 minutes.

In a deep pot or fryer, heat vegetable oil to 350°F (175°C).

Fry Beignets

Carefully drop the cut squares of dough into the hot oil. Fry for about 2-3 minutes on each side until golden brown.
