In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

In a non-stick skillet over medium heat, add a little oil and sauté the chopped bell pepper, onion, and tomato for about 4-5 minutes until softened.

Add Sausage

Add the cooked and crumbled sausage to the skillet with the sautéed vegetables. Stir to mix and cook for an additional 2 minutes.

Add Cajun Seasoning

Sprinkle the Cajun seasoning over the mixture and stir well to combine, cooking for another minute to let the flavors meld.

Pour in Egg Mixture

Pour the prepared egg mixture over the vegetable and sausage mixture in the skillet, tilting the skillet slightly to ensure even distribution.
