Bisque Base

Method

Bisque Preparation

1

Sauté the Aromatics

In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and minced garlic, cooking until the vegetables are soft and translucent, about 5-7 minutes.

2

Add Tomato Paste and Stock

Stir in the tomato paste and cook for an additional 2 minutes. Pour in the seafood stock and add the bay leaves. Bring to a simmer.

3

Season the Base

Add the salt, black pepper, and cayenne pepper to the pot, stirring well. Let the mixture simmer for 15 minutes to develop flavors.

4

Incorporate Cream

Remove the bay leaves and stir in the heavy cream, allowing the bisque to heat through for another 5 minutes.

Adding Seafood

5

Cook the Seafood

Add the shrimp, crab meat, and fish fillets to the bisque. Cook for an additional 5-7 minutes, or until the seafood is cooked through and opaque.

Preparing the Poboy

6

Assemble the Poboy

Slice the French bread pieces lengthwise without cutting all the way through. Fill each piece with shredded lettuce, sliced tomatoes, and pickles.

7

Add Remoulade

Spread a generous amount of remoulade sauce inside each bread piece.

Serving

8

Serve the Dish

Ladle the seafood bisque into bowls and serve alongside the prepared poboy sandwiches.
