Method
Shrimp Preparation and Cooking
Prepare the Shrimp
In a mixing bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper. Mix well.
Coat the Shrimp
Dip each shrimp into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until fully coated. Shake off any excess.
Heat Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Shrimp
Carefully add the shrimp to the hot oil in batches, frying until they are golden brown and crispy, about 2-3 minutes per side. Use a slotted spoon to remove shrimp and place on a paper towel-lined plate to drain excess oil.
Remoulade Sauce Preparation
Mix the Sauce
In a small bowl, combine mayonnaise, Dijon mustard, chopped pickles, chopped capers, hot sauce, lemon juice, and garlic powder. Stir until well combined and smooth.
Sandwich Assembly
Prepare the Hoagie Rolls
While the shrimp are frying, slice the hoagie rolls in half lengthwise and toast them lightly if desired.
Assemble the Sandwich
Spread a generous amount of remoulade sauce on both sides of the toasted hoagie rolls. Layer the shredded lettuce on the bottom half, followed by the sliced tomato. Top with the fried shrimp and close the sandwich.
Serve
Serve immediately while the shrimp are hot and crispy. Enjoy your Shrimp Po'Boy!
