Preparation of Base

Combine Milk and Cream

In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is hot but not boiling.

Mix Sugar and Egg Yolks

In a separate bowl, whisk together 3 tablespoons of granulated sugar and 4 egg yolks until the mixture is pale and slightly thickened.

Temper the Egg Mixture

Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.

Cook the Mixture

Return the combined mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon, about 5-7 minutes.

Flavoring and Chilling

Add Espresso and Flavorings

Remove the saucepan from heat. Stir in 1 cup of espresso coffee, 1 teaspoon of vanilla extract, and a pinch of salt. Mix well.

Transfer the mixture to a bowl and allow it to cool to room temperature. Once cool, cover and refrigerate for at least 4 hours or overnight.
