Prepare the Tuna

Season the albacore tuna steaks with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Once hot, add the tuna steaks and sear for about 3-4 minutes on each side, or until cooked to your liking. Remove from skillet and set aside.

Make the Vermouth Sauce

In the same skillet, add dry vermouth and bring to a simmer. Let it reduce for about 5 minutes, scraping the bottom of the skillet to incorporate any browned bits.

Prepare the Brown Butter

In a separate small saucepan, melt the butter over medium heat. Continue cooking until it turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

Combine Everything

Add the crushed spring peas to the vermouth sauce and stir in the brown butter and tarragon. Cook for an additional 2-3 minutes until the peas are heated through.

Plate and Serve

Place the seared tuna steaks on a plate and spoon the vermouth sauce with peas over the top. Garnish with additional tarragon if desired and serve immediately.
